Stuffed Peppers Recipe

Yum yum! These are good and healthy for you!

Serves four
Ingredients:
1/2 cup of green lentils
1 bay leaf
Salt
Pepper
1 tablespoon of ground cumin
1 tablespoon of ground cardamom
1 cup of yellow pearl couscous
Four green or red peppers
1/2 cup of walnuts
A pinch of red pepper flakes
1 tablespoon of smoked paprika

In one pot, bring three cups of water to a boil. Add the lentils and bay leaf and cook them until the lentils are soft (normally 30-45 minutes). At the same time, boil two cups of water. Once it's boiling, add the couscous and lower the stove to simmer. Cook that until the couscous is soft (normally 8-10 minutes). Drain both the lentils and couscous and combine them in a pan with salt, pepper, the red pepper flakes, smoked paprika, cumin, cardamom, and the walnuts. Cut the tops off the peppers, remove the insides, and spoon the couscous and lentil mixture into each of the peppers. Then, place them on a baking sheet and bake at 375 degrees for 15 minutes. Voila! It's ready to go!
